Green Valley Ranch Resort, Spa and Casino Opens Terra Verde Italian Restaurant

Henderson, Nev. – Green Valley Ranch Resort, Spa and Casino’s newest upscale culinary offering, Terra Verde, featuring authentic Italian dishes, as well as an extensive collection of over 1,500 bottles of premiere Italian and California wines has recently opened.

The executive chef of Terra Verde, Massimiliano “Max” Campanari, joins us from Wynn Las Vegas’ Bartolotta Ristorante di Mare. Born and raised in Genova, Italy; Chef Max went to culinary school at the Nino Bergese Institute in Italy where he gained experience in authentic Italian cuisine.

Terra Verde will soon be home to the winner of Fox TV’s hugely popular reality show, Hell’s Kitchen 3. The show, which is hosted by the acclaimed chef Gordon Ramsay, is a culinary boot camp for 12 aspiring chefs. The winner of the show earns the coveted title of Head Chef at Terra Verde at Green Valley Ranch Resort, Spa and Casino. Hell’s Kitchen season 2 winner is currently the Senior Chef at Red Rock Casino, Resort and Spa’s Terra Rossa, the sister Italian restaurant to Terra Verde.

Terra Verde’s extensive menu offers diners an impressive selection of culinary delights from authentic Italian pasta to fresh seafood dishes. Chef Max highlights a few of his favorite dishes on the menu, such as:

• Risotto con cappesante e asparagi – Carnaroli rice, imported from Italy, with scallops, fresh asparagus and saffron sauce
• Branzino alla ligure – Mediterranean sea bass filet with potato, black olives and white wine sauce
• Involtini di vitello –Pan-seared veal rolls with prosciutto, fontina cheese, sage, white wine veal sauce and spinach
• Pansotti in salsa di noci – Fresh stuffed pasta filled with green Swiss chard and ricotta in a creamy walnut sauce

The restaurant is open Sunday through Thursday from 5 pm -10 pm and Friday and Saturday from 5 pm – 11 pm. Reservations are recommended by calling 702-617-7075. As with most restaurants in the Station Casinos’ culinary family, Terra Verde is owned and operated by the company.

Terra Verde joins Green Valley Ranch Resort, Spa and Casino’s many other amenities including eight other restaurants, such as Hank’s Fine Steaks and Martinis, Sushi + Sake and Tides Oyster Bar; a 30,000–square–foot-spa; Whiskey nightclub; a full array of gaming offerings including a state-of-the-art race and sports book and 24-hour poker room; a 10-screen movie theater and free live entertainment Thursday through Saturday in Ovation Lounge.
